I love tacos (who doesn't) but it can be hard to find decent Mexican food in the UK. This is especially true of the delicate Baja Fish Taco, which is often undermined by overly flavourful accompaniment. The fish is so mild in flavour, it is important not to overshadow this with storng flavours such as smokey chipotle or sweet mango.

I make my own flour tortillas, following a simple and reliable recipe from BBC Good Food.

Beer batter the haddock and deep fry in a wok. Then serve with shredded cabbage, avocado, a light chili creme and a little cilantro.

Perfection.
